Infinity Fisheries is open to the public for farm gate sales of Barramundi and Jade Perch each Saturday from 8.30am – 1.30pm.

This is NSW’s freshest, award winning barramundi and our fish are live. Infinity Fisheries farms Australian fish species using a unique fully enclosed specifically engineered water recirculation system which re-cycles precious water and provides stress free conditions to grow healthy, pollution free fish without environmental impact. Whole, cleaned or fillet fish are available from the farm gate.

Infinity Fisheries was established in 1999 with the aim to provide live barramundi fish to the Sydney Restaurant market. The site was specifically located as there existed a vast aquifer underground.

Our facility was designed to produce approximately 100 tonne of fish per annum at a rate of 2 tonne per week. We have since upgraded our farm to a capacity of close to 200 tonne per annum.

The facility is split in two, with four tanks on each side, within each tank there are four sections. Each section holds approximately 33000 litres of water, and so the farm holds over 1 million litres of water. Our facility is a re-circulated system and we exchange approximately 60,000 litres per day.

While we had access to a bore the quality of water wasn’t quite suitable to grow fish as it holds a very high concentrate of iron. We have since designed a water filter that removes the iron before sending into our farm, the process is chemical free and extremely efficient and if you come on site you will see the water treatment plant.

Barramundi and Perch both native fish grow best with a water temperature of 26 degrees or higher we keep our water in the farm at a range of 26-28 degrees. The water coming out of the ground is at 13 degress and so we have storage tanks that will hold the water from the bore. The water is then put through a solar heating process on the factory roof and the into insulated tanks. The water from the insulated tanks is then further heated by a heat exchange pump to increase our water temperature. Additional processes in heating our water involves using that waste energy from our blower pumps (hot air) into the heat exchange. Energy now represents our second highest cost in the farm.

Fish fingerlings are brought in at less than 1gm in batches of 10,000 to 50,000 these are sourced from a number of north Queensland hatcheries. They are put into a quarantine section of the farm known to us as the Nursery. The nursery has segregated water from the main farm and is located away from the grow out sections. Fingerlings consume more than their body weight each day, and have a growth rate of 5% per day upto approximately 25gms. Fingerlings will be held in the nursery for approximately six weeks before being graded and going into cages which sit inside the tanks.

At approximately 40 grams fingerling will be graded again and moved into section for grow out. Now fish are like any growing thing they all grow at different rates as such we must constantly grade the fish. Barramundi are particularly cannibalistic and failure to grade will result in an increase mortality rate. Grading will occur every 8 to 10 weeks. The complete grow out for market size fish (500gms + ) is approximately nine months.

Having achieved market size all our fish is sold live to fish wholesalers, who on sell these to the restaurant market.

Also available to the public is our farm gate sales this occurs every Saturday from 8.30am to 1.30 pm. You are able to purchase whole fresh fish, cleaned fish or filleted fish. Pending on supply we also have available smoked Barramundi.

Infinity Fisheries offers superb 1 and 2 bedroom apartments for short term stay. You can stay over night, a week, or longer. Each apartment is fully self contained with bedding and towels.
